What Le Duck is a new street food brand promising quintessentially French confit duck with a Scottish twist. Tuck into confit duck piled high in locally baked brioche buns (that require 2 hands to hold), loaded pomme frites smothered in caramelised gravy and blue cheese sauce, and Duck Duck G̶o̶o̶s̶e̶ Haggis – a meaty roulette of Macsween and confit duck bonbons.
At the helm is Pauline, who believes that duck is a luxury meat that’s not eaten nearly enough in the UK. “I grew up on it and, and when hearing about Edinburgh Street Food, knew this was my opportunity to make the soft, unctuous meat accessible to more people”.
