Haldi takes its name from the Hindi word for turmeric – a staple spice in Indian cooking and a signature note in their vibrant street-food dishes at ESF.

At the helm is Madan, whose family roots lie in a Himalayan village in Northwest India. Born and raised in Delhi, he trained in some of the city’s most respected hotels and restaurants before moving to Edinburgh in 2005. After years spent cooking in the capital’s top Indian kitchens, his dream came true in 2023 when he opened his acclaimed five-star restaurant in Mayfield Gardens.

At ESF, Haldi brings the same quality ingredients and craft, reimagined as the bold, authentic street food you’ll find on the streets of Delhi.
